About the Recipe

Ingredients
Cocktail
2 oz vodka
¾ oz Galliano
½ oz Cointreau
¾ oz lemon juice
1 oz milk
Foam
200ml Orange Juice (freshly squeezed, pulp strained)
½ tsp vanilla
Xanthan Gum - 0.4g
1 nitrogen charger
Preparation
Clarifying the Cocktail
Add vodka, Cointreau, Galliano, and lemon juice into a mixing glass or measuring cup.
Slowly pour the alcohol mixture into a container with your milk; this will cause the mixture to curdle.
Stir gently to combine, then let the mixture sit for at least 1 hour.
Strain the mixture through a coffee filter until the liquid changes from cloudy to clear.
Reintroduce the cloudy byproduct back into the filter and allow the entire mixture to strain through again.
Making the foam
Add orange juice, vanilla extract, and xanthan gum to a cream whipper and charge with nitrogen
Place in the fridge for at least 2 hours to chill before using
Serving the cocktail
Pour clarified cocktail into a mixing glass with ice, and stir to chill and dilute
Strain into a rocks glass over a large ice cube
Add orange foam on top and enjoy!
