About the Recipe

Think banana bread meets eggnog—but lighter and smoother. This clarified cocktail blends ripe banana, warm spices, and vanilla with rum for a cozy, dessert-like drink that finishes clean and silky.

Ingredients

Cocktail - Makes 2-3 servings

  • 4 oz aged rum

  • 2 oz lemon juice

  • 1.5 oz banana syrup

  • 0.75 oz Amaro Nino

  • 0.75 oz Licor 43

  • 2 dashes aromatic bitters

  • 2 dashes chocolate bitters

  • 1 oz milk

  • 1 oz eggnog


Banana Syrup

  • 1 banana

  • 1/2 cup brown sugar

  • 1/2 cup water

  • 1 tsp vanilla extract

Preparation

Banana Syrup

  1. Add a whole banana to a saucepan. Using the back of a fork, mash the banana until soft.

  2. Add brown sugar and water, stir, and bring to a simmer.

  3. Add vanilla extract and stir to combine.

  4. Remove from the heat and allow to cool.

  5. Strain out the solids and store in an airtight container.


Clarifying the Cocktail

  1. Add rum, lemon juice, Amaro Nino, Licor 43, aromatic bitters, and chocolate bitters to a mixing glass or measuring cup.

  2. In a separate container, combine the milk and eggnog.

  3. Slowly pour the alcohol mixture into the milk mixture; this will cause the mixture to curdle.

  4. Stir gently to combine, then let the mixture sit for at least 1 hour.

  5. Strain the mixture through a coffee filter until the liquid changes from cloudy to clear.

  6. Reintroduce the cloudy byproduct back into the filter and allow the entire mixture to strain through again.

Serving the Cocktail

  1. Add 3 oz of the clarified cocktail mixture to a mixing glass filled with ice.

  2. Stir until chilled and properly diluted.

  3. Strain into a coupe glass.

  4. Garnish with freshly grated nutmeg and enjoy!
